Quick simple but yummy breakfast for kids:

Today Feb 2nd 2021, schools were closed to due to snow day, kids were at home. I decided to take a day off from work to spend time with kids and enjoy the white, cool weather. In the morning ,we were lazy. We woke up very late. By the time kids brushed their teeth, they were hungry. They were ready to eat tasty breakfast. We decided to prepare yummy banana pancake. My second kid helped me to prepare pancake batter.

Recipe for pancake batter - I always bring buttermilk pancake mix from form shop. To prepare the batter, first take 1/2 cup milk (usually, I use whole milk) in a mixing bowl, add one raw egg, mix well. To this mix, add the pancake mix and mix well. Make sure no lump form while mixing. Batter should be thick enough to pour to the pan. Now the batter is ready.

Other ingredients: Butter, maple syrup, ripened banana, wipe cream, chocolate syrup, multiple sprinkles.

Once the batter is ready, keep the mixing bowl aside. Heat the pan, once it is hot, pure the batter to make a round shaped pancake. Keep the heat to medium and cook for about 5-8 minutes. Wait until top side bubbles open and form honey comb like texture. Once the bottom is well cooked, flip the pancake to cook the top. Cook the second side to 6-7 minutes, then transfer to serving place.

Take a small cube size butter and spread on top of the hot pancake. Pour 2 table spoon maple syrup and spread. Take a ripened banana, cut into small round slices, spread on top of the pancake, then spread the wipe cream on top of the banana, garnish with the chocolate syrup and multi-color sprinkles.

Health note: Kids love this breakfast. To be on healthy side, watch out how much butter, maple syrup and wipe cream you want to add. Each of these items add good taste and also add enough calories. Even with limited serving, these combination of items still bring yummy taste to our kids. Please try this recipe and let me know if you and your kids like it. What alternatives you tried?

Thanks

Savitha
